Save and compress will help the file size - but not the speed. Grass textures should not take up too much resources if you keep the graphic files reasonably small (<512×512). Trees and bushes are however, very demanding.

You may gain something by using one tree/bush model and copying it around and scaling/colouring according to needs, instead of using several different models. At least, it will make the file size smaller as the .sh3d file only will contain one instance of the mode and re-use it in several places. Of course, using smaller models will also help, but it is hard to create a life like tree - at least if garden is the primary objective of your model - in a small model (see SF 3D models ticket 261 for a similar frustration of mine, but then, my trees were just for showing something outside the windows and rendering shades).

You may also keep some of the more demanding models in a separate file - correctly placed - and copy in and out for the final view.
