Re: why "Recompute walls" is disabled?
This check box is disabled when there's no wall to recompute anymore. But that doesn't mean that you can't change the color or texture of wall sides.

Re: why "Recompute walls" is disabled?
If I understand this correctly: Changing the wall colour/texture from the room properties works on walls connected to the room. But as one wall can be connected to several rooms, the "Recompute walls" box will split the walls, so you do not apply the colour/texture on the part of the wall that extends outside the room.
So, it there is no "Recompute walls" box, there is no need to split (recompute) walls. And therefore no need to enable it as it would do nothing anyway.
But maybe you have also moved your room or a wall slightly, so the room doesn't touch all walls. In which case you can delete the room, and then use the Room tool and double-click inside the room to make the room fit exactly.

Make sure that there are no openings in the walls of the room, delete the room, and then use the Room-tool (Create room ) and double-click. You now should have a room that fits the walls exactly - and the option of recalculating the room should be available if one wall extends outside the room.
It is also possible to split the wall manually. Select the wall, use Plan>Split wall, and drag the new wall connection to where you want it.
