level 0 and level 1. What their purpose is ??

Start with the User's Guide of Sweet Home 3D. All the basics are handled there.
Dodecagon.nl has some additional manuals, specifically one that explains levels in more detail.
Polylines are basically just that: lines. You can design a complete house without using polylines. They are mostly an extra for usage in the 2D view but you can make them visible in the 3D view. There are plugins that use polylines for displaying wirings etc. Just like the dimension lines they are mostly for support in your design, not as models that make up the design itself.
If you don't understand one or more of the object types after reading the manuals, ask again with more specific questions.
