Place them on a separate level with the same elevation. Then you can make that level invisible.

[English] Right click on the level tab with the floor(s) you want to hide and select "Add level at same elevation". Select the level with the rooms(s), select the rooms(s) and cut with ctrl+X. Select the new added level and paste with ctrl+V. Now you can make the new level invisible which hides the rooms on that level.

Using the same procedure, do you think it's possible to create a level containing only the dimensions? And if so, how would you go about it?
Of course, that is what a separate level with the same elevation is often used for. You do exactly the same as with the extra level for the rooms: add a level with the same elevation. Since it has the same elevation you will see everything from the original level. You can draw the dimensions and make them invisible by making the level invisible just like you did with the rooms.
